2 pounds Italian sausage casing removed
2 pounds ricotta cheese
1 pound mozzarella cheese diced
3 tablespoons parsley chopped
1/4 pound ham chopped
1/4 pound prosciutto chopped
1/4 cup Romano cheese grated
1 - 2 crust pastry
Notes 1.Preheat oven to 400
2.Prepare pastry and line a 10 inch deep dish pie pan. Or spring form pan. Prick dough with a
fork and sprinkle with a little flour.
3.Brown sausage meat lightly with two tablespoons of water.
4.Combine ricotta and mozzarella;add eggs one at a time,beating well after
each with a wooden spoon.
5.Add cooked sausage meat, prosciutto,ham, parsley, and grated cheese.
6.Pour mixture into lined pan and cover with top pastry. Trim leaving about
a 1/2 inch overhang. Fold dough under and back and flute edge.
for steam to escape.
7.Bake 15 minutes, lower oven to 350 degrees and continue baking for 40 to
50 minutes or until tester comes out dry. Maybe served hot or cold.
