POPPY SEED BREAD
I have been making this bread for years. Every year I give it to all my friends. I am sharing it with you , that doesn't mean you won't see me at Christmas with one of my many loaves of bread. Enjoy.
BAKE FOR 1 HOUR @ 350 DEGREES
3 CUPS FLOUR
2 1/2 CUPS SUGAR**
2 tsp SALT
1- 1/2 tsp BAKING POWDER
2-3 T POPPY SEED
(MIX DRY INGREDIENTS TOGETHER)
1-1/2 CUP WHOLE MILK (Not Fit For Human Consumption “raw” if you can get it*)
3 EGGS (You will notice a difference when using fresh eggs*)
1 CUP + 2 T OIL
1- 1/2 tsp VANILLA
1-1/2 tsp ALMOND EXTRACT
1 T MELTED BUTTER
OPTIONAL 1 CUP CHOPPED FRUIT (STRAWBERRIES OR BLUEBERRIES ETC.) BUT THEY MUST BE PRIMO RIPE AND FRESH
BEAT ALL INGEDIENTS 2 MINUTES (BY HAND IS BEST, DON’T OVER BEAT)
POUR INTO 2 GREASED LOAF PANS 8-1/2 x 4-1/2 I.D.
1/4 CUP ORANGE JUICE
1/2 - 3/4 CUP SUGAR**
1/2 tsp VANILLA
1/2 tsp ALMOND EXTRACT
1 T MELTED BUTTER
OPTIONAL 1/8 CUP HONEY (UNPROCESSED RAW IS ALWAYS BETTER)
PRICK LOAFS WITH SERVING FORK, SLOWING WORK TOPPING OVER LOAF. BASTING BRUSH WORKS GOOD HERE. LET STAND FOR 20 MINUTES THEN REMOVE FROM PAN TO COOL. AT THIS POINT I BRUSH THE REMAINDER OF THE TOPPING ON ALL FOUR SIDES.
*IF YOU LIVE IN AN URBAN ENVIRONMENT DRIVE AROUND UNTIL YOU SEE CHICKENS CROSSING THE ROAD (WHY THEY DO THIS REMAINS AN ENIGMA SHROUDED IN MYSTERY) FOLLOW THEM HOME AND ASK IF THEY CAN SPARE A FEW. (IF YOU HAPPEN TO SEE A COW YOU ARE IN THE ZONE)
**SOME SUGGEST THAT LESS SUGAR IN THE TOPPING WOULD BE BETTER. IF YOU REDUCE SUGAR THE TOPPING SHOULD BETTER PENETRATE THE LOAF, IT CAN’T HURT, BUT THAT I LEAVE TO THE BAKER. THE UNPROCESSED CANE SUGARS AFFORD A MORE SUBTLE TASTE AND ARE LESS SWEET PER UNIT OF VOLUME DUE IN PART TO GRANULAR SIZE (REMEMBER YOUR PHYSICS CLASS?)

Very simple recipe. It takes the place of the ubiquitous fruit cake as a holiday treat. Just be careful if you plan to ride in the Tour de France.
- 3 Cups Flour
- 2 1/2 Cups Sugar Raw Sugar
- 1 1/2 tsp Baking Powder
- 2 - 3 Tbsp Poppy Seeds
- 1+1 Cup + Tbsp Oil Canola works good
- 1 1/2 Cups Whole Milk
- 3 Eggs
- 1 1/2 tsp Vanilla
- 1 1/2 tsp Almond Extract
- 1 Tbsp Melted Butter Use instead of butter extract
- 1/4 Cup Orange Juice Topping
- 1/2 Cup Sugar Topping
- 1/2 tsp Vanilla Toppng
- 1/2 tsp Almond Extract Topping
- 1/2 Tbsp Melted Butter Topping
- 1/4 Cup Honey Topping (optional)
- Mix all the dry ingredients thoroughly.
Mix all the liquid ingredients
1 cup of chopped seasonal fruit like strawberries or blueberries can be added as desired.
Beat together for 2 minutes, don't overdo it.
Pour into two greased loaf pans (8-1/2 X 4-1/2)
Bake for 1 hour @ 350 degree
Note: I have tries this recipe with all natural ingredients, raw sugar, raw milk, fresh laid eggs and it makes a difference. I always like to throw in raw honey to augment the sugar.
- Topping: Mix all ingredients keep warm until use. Remove loaves from oven. Use a serving fork to prick the loaves. Brush on topping as desired. Let stand for 20 minutes. Remove from pan and brush remaining topping on all four sides
